Baked Fried Egg Crostata





My parents will be on their way to Italy in just a few weeks, and talking with them over the phone about it got me in the mood for something Italian-ish and God knows I eat enough gelato
, so I decided to try this Baked Fried Egg Crostata.


Ingredients:
1/2 recipe of pie dough
3 tablespoons of heavy cream
1 garlic clove, minced
3 slices of prosciutto
2 eggs
1 tablespoon parsley, roughly chopped
1 pinch chilli flake
balsamic vinegar


Preheat oven to 425 degrees F. On a lightly floured surface, roll out dough to be about 1/8 in thick. Transfer dough to a parchment lined baking sheet and fold over the edges to about 1 to 2 inches. Pour the cream into the center of the crostata and sprinkle with garlic. 
Next layer with prosciutto; I went to Harmon's Grocery for the ingredients and they had several different choices. After sampling them, I decided on the Creminelli, a local (Utah made) variety; it was a bit sweeter than the Italian prosciutto.
Next bake for about 10 minutes, until the prosciutto is starting to get tender and the crostata is golden brown. Remove the crostata from the oven, crack the eggs on top. Sprinkle with parsley, salt, pepper, and chilli flake, and bake again for 7 to 10 minutes, or until the eggs are just set. Remove from oven, sprinkle balsamic, and slice like a pizza. 

It came out so yummy, and was super quick to make!
